2016 Reserve Cabernet (100% Cabernet Sauvignon)
This is a bottling of our very best barrels of Cabernet Sauvignon. The grapes started in Seven Hills West Vineyard in the Rocks district of Milton Freewater in the Walla Walla Valley AVA. The pronounced aroma on this wine is the first thing you notice. Balck plum and red cherry with just a hint of cedar jump out of the glass. When you sip, your palate fills with red raspberry, plums, and baking spices. The remarkably smooth texture signals this wine is ready to drink now, or hold and let it mature even more.
Intense primary aromas of black currant and dark cherry are followed by hints of cedar. On the palate, those flavors are confirmed and embellished with cinnamon, chocolate, and brioche toast.
Balance is the star here. The tannins, while assertive, have been polished by lengthy aging and give this wine a strong backbone. The acidity elevates all of the flavor components. Still developing, please decant this wine for an hour before serving. Or cellar up to ten years.
